Slow cooker potato soup recipe

I have found recipes recently that my boys gobble up without much fuss of  “eat your dinner please” or “I don’t like this”. One of those recipes is for slow cooker potato soup. I have a more tedious and time consuming recipe for potato soup that is delicious but some times I just don’t have the time or energy to fix it but still want to feed my guys some good meals- slow cooker to the rescue! Just about anything that you want to fix on the stove top or in the oven can be cooked in a slow cooker. Side note, do you call it a slow cooker or crock pot? Regardless of the brand they are all crock pots to me. Anywho, on to the slow cooker potato soup. This soup has become a comfort food for me but if I’m not careful it could pack back on the lbs. I have lost recently. Nothing wrong with a little comfort food now and again as long as I remember it’s in moderation.

Slow cooker potato soup recipe

slow cooker potato soup. Really creamy and delicious. This makes a great comfort dish for me.
  • 4-6 large potatoes, peeled and cubed
  • 1 large onion, diced (I substitute with onion powder)
  • 1 quart (4 cups) chicken broth
  • 3 garlic cloves, minced
  • 1/4 cup butter
  • 1 can evaporated milk
  • 1 (4.5 oz) package real bacon bits or crumbled bacon
  • salt and pepper to taste
  • 1 cup shredded cheese
  • sour cream (optional topping)
  • chives (optional topping)
  1. Combine all ingredients except the milk and cheese in a 6 quart sized slow cooker/ crock pot.
  2. Cook on high for 4 hours or on low for 8 hours.
  3. After cooked, mash some of the potatoes so it’s not as chunky and the broth will thicken up.
  4. Stir in milk and cheese.
  5. Garnish with toppings of choice and enjoy.

  4. This looks delicious. Also, I think Crock Pot is supposed to be the specific brand whereas slow cooker is the generic name for them… I think. 😉 Also, your recipe shows up a little funky in formatting for me. Perhaps, you need to update the plugin?

    Shanaka, Im trying your recipe!! I’m just leaving out the evaporated milk and in place of it two cans of cream of celery!! I dont like the way the milk taste!! I have never addded garlic, sour cream or chicken broth!! I know if its anything like your potato cassrole, it will be to die for!!
